If your favourite bakeries have started delivering in your area, then well and good, stay happy, stay safe. But if you are one who is still waiting outside the bakery, come back home because you are going to bake yourself a treat this time. It is always better to bake a cake yourself rather than not having a cake at all.

INGREDIENTS

Cake

  • 1/2 cup brown sugar (firmly packed)
  • 1/2 cup butter
  • 1 cup butter
  • 1 container sour cream
  • 1 cup sugar (granulated)
  • 1 1/4 cup dark brown sugar (firmly packed)
  • 1/2 teaspoon salt
  • 1/2 cup Buttermilk
  • 1/4 teaspoon baking soda
  • 2 cup pecans (finely chopped)
  • 2 teaspoon vanilla extract
  • 2 cup vanilla wafers (finely crushed)
  • 2 teaspoon baking powder
  • 2 1/2 cup all-purpose flour
  • 4 large eggs

Frosting

  • 1/2 cup butter
  • 1/2 cup heavy cream
  • 1 cup chocolate-covered toffee bars
  • 1 chocolate chips (semisweet)
  • 6 cup sugar ( powdered)

Preparation method

 Cake:

  1. Preheat oven to 350 degrees F. Take a medium bowl and stir together brown sugar and ½ cup melted butter until blended. Add pecans and vanilla wafers; coat by tossing. Take a lightly greased baking pan and spread the mixture. Bake it for 15 – 20 minutes or until lightly toasted, stir after every 10 minutes. Place on a wire rack and let it cool completely.
  2. At medium speed, beat the butter until creamy with an electric mixer. After that, add sugars, beat well. Put egg yolks (1 at a time) beating after each addition until blended properly.
  3. Mix together flour, salt, baking powder and baking soda in a medium bowl; also, mix together sour cream, buttermilk and vanilla extract, in a separate bowl. 
  4. Mix in the flour mixture to the butter mixture along with sour cream mixture, remember to start and end with flour mixture. After each addition, Beat at low speed until just blended. Scrape down the sides of the bowl as needed.
  5. Time to beat the egg whites. Take a large bowl and at high speed beat with an electric mixer until it forms stiff peaks. Now you have to Gently mix in one-third of egg whites into batter; fold in the remaining one.
  6. Grease and flour 3 round cake pans (9-inch); in the bottom of each pan, spread 1 cup of pecan mixture. Spoon the batter into prepared pans. Tap the pans lightly on the counter to eliminate large air bubbles (if any).
  7. Bake for about 18 – 20 minutes, so a toothpick inserted in the center comes out clean. Cool the pans completely on wire racks. Shift the layers from pans to wire racks; cool completely, it will take about 1 hour. 

For the Frosting: 

  1.  Take a microwave-safe bowl, heat ¼ cup cream and chocolate chips at medium speed for 2 to 3 minutes or until smooth and melted, stirring at the intervals of 30 second. Cool till room temperature.
  2. Beat softened butter with an electric mixer until creamy at medium speed. Gradually add remaining ¼ cup cream, powdered sugar, one tbsp. At a time, beat at low speed until mixed after each addition. Blend in chocolate mixture until fluffy.
  3. Coat frosting between the cake layers, sides and the top of the cake. Mix together finely chopped toffee bars and remaining pecan mixture; stick it on the sides of the cake.
