Healthy Recipe For A Perfect Breakfast In Bed: Father’s Day Celebration

Father’s day is approaching at the same speed as covid cases are increasing in India. But you know what they say, after every bad storm, the sun always shines bright. Right now, what you need to do is find happiness, besides the horrific time. Besides what’s happening in the world, important days or special occasions arrive right on time. Nothing should stop you from celebrating these days because it’s actually a ray of positivity in your life. WAIT! Let me complete. I’m not suggesting you go out and celebrate with friends and family. Stay home and stay safe is still our motto and you should stay in and request your loved ones to do the same. I’m talking about at-home celebrations for father’s day. If you are at home with your family, there are tons of ways to celebrate this day where you don’t need to go out. 

How about breakfast in bed? Well, a lot of “Father’s day celebrations ideas” have this idea but nobody really tells you what to make for breakfast. So, I’m happy to share an easy recipe that your dad will love as it’s healthy, loaded with fruits, fulfilling and most importantly made by you. This is a recipe I made for my dad last year and while my sibling tried to allure him with a father’s day gift, this effort gave a tough competition. You can too try it this year.  trust me, the recipe is easy even for a beginner. It’s called a blueberry granola bowl. Following are the ingredients required, make sure you collect them in advance. Most of them are fruits which you have to buy on time. 

Ingredients required:

  • 3 bananas, chopped (about 250g)
  • 170g blueberries
  • 220ml unsweetened almond milk 
  • 2 tsp dried raspberries
  • 1 kiwi, sliced and quartered
  • 4 strawberries, halved
  • 1cup raspberries
  • 2 pinches shaved coconut
  • 2 tbsp pomegranate seeds 
  • 3 tbsp coconut oil 
  • 4 tbsp maple syrup
  • 100g oats
  • 50g flaked almonds 
  • 50g pecans, chopped
  • 2 tbsp sunflower seeds
  • edible flowers a handful (optional)

* you can use dried fruits of your choice. 

Now, let’s move to the preparation method. I know you cannot wait. 

Method 

Stage 1 

Put the banana pieces into a cooler bag and freeze overnight. keep the bag flat on the tray if possible so the pieces don’t stick together. Give the bag a shake following 2 hours to help keep them discrete. 

Stage 2 

To make the granola, heat your boiler to 160C/fan 140C/gas 3. Dissolve the coconut oil and maple syrup in a little container over low heat until blend together. Tip the leftover into a bowl with a touch of salt, pour over the warmed mixture and blend well until everything is covered with liquid. Tip onto a butter paper-lined heating plate and prepare for 30 minutes or until nice golden and crunchy. Mix at regular intervals so the entire blend toasts uniformly. Keep it until cool. 

Stage 3 

Keep 40g of the granola for the serving bowl and put the rest in an air tight container for one more day. 

Stage 4 

Put the frozen banana pieces into a blender or food processor and add 150g of the blueberries with the almond milk. Mix until smooth and pour into 2 dishes. 

Stage 5 

Make a ring of granola around the edge of every smoothie bowl and cover one end with the fresh raspberries. Then decorate the fruits and blueberries in the center and cover with the edible blossoms (if you are using), shaved coconut and pomegranate seeds. Serve right away.

This is the perfect yet easy father’s day recipe for your breakfast in bed idea. You can also place a little father’s day gift in the tray along with the bowl of deliciousness.
